October is upon us!

Still loving my mixer (awesome bday gift) so another baking day it will be. Decided to give a recipe out of my "mixer bible" that came with my Kitchen Aid Mixer a try.... Peanut Butter Cookies!

2 1/2 cups flour
3/4 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
1 cup unsalted butter
1 cup lightly packed brown sugar
1 cup sugar
1 cup peanut butter (crunchy or creamy) --I used creamy
2 eggs
2 tsp vanilla

Baked at 350 for 10-12mins, I have a propane stove so always takes less time than directed :)   I actually liked these!  I don't know what it is about peanut butter cookies (by themself, love my peanut butter temptations) that I just can't seem to do properly they always end up rock hard and not very good, these were good.

Dinner Roll Recipe!

As promised, Here is the Dinner Roll Recipe I used :) They were a hit with everyone/no one complained but not sure I'd use this exact recipe again.  They are a sweet bun so wouldn't be for someone that doesn't like them sweet.
  • 1/2 cup warm water (110 degrees F/45 degrees C)
  • 1/2 cup warm milk
  • 1 egg
  • 1/3 cup butter, softened
  • 1/3 cup white sugar
  • 1 teaspoon salt
  • 3 3/4 cups all-purpose flour
  • 1 (.25 ounce) package active dry yeast
  • 2-4tbsp of extra butter
I used my Kitchen Aid for the recipe, like I previously said so didn't exactly follow the directions given on the recipe. Heres what I did.... I mixed the water and milk, nuked in in the microwave for about 30 seconds, poured it into the bowl of my KitchenAid mixer, then stirred in the sugar until it dissolved, then stirred in the yeast. After it got foamy (about 10 mins) I mixed in the salt, butter and egg, then I started mixing the flour a half cup at a time. I let it rise for about 45 minutes in the bowl, then punched it down, divided it into 16 balls and let it rise for another hour, then baked for 10 minutes.

One of My Fav Desserts

I made peanut butter temptations, which were awesome...one of my favourite things to make!  I've included the recipe :)

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup butter, softened
  • 1/2 cup white sugar
  •  1/2 cup peanut butter
  • 1/2 cup packed brown sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • Appoximately 24-30 miniature chocolate covered peanut butter cups, unwrapped (depending on how big you make them)
Combine ingredients (not including pb cups) and roll into small balls and place in mini muffin tin bake at 375 for approximately 8 minutes, then as soon as they are removed from the oven push pb cups into centers....Afterwards I put them into the fridge/freezer for a few minutes to solidify.

Welcome to My Blog!

So this is my first blog post, and not exactly sure how it should go.  I've recently seen lots of people start blogs and it's gotten me interested to start my own.  For the most part this will be a diary of my day to day life, what it's like being a mommy and a wife.  Of course each persons life is different but this is my story.  To start, I'll tell you a little bit about myself.  I'm a twenty-two year old mother of a three and a half year old daughter.  I've been married to the most incredible man for five wonderful years and like the blog title says I love my life. I like to think of myself as a very creative person, I love photography and scrapbooking as well as card-making and cooking and baking. My husband and I also love construction and doing wood-working projects together.  We built our daughter her bed, which i will show you in another blog post, and we just recently built a front porch onto our place.  We have many more projects in mind though, so I will share them with you in future blog posts.  I will also share my favorite recipes and my success/failure stories in trying new ones.  Well here is the introduction to my blog and I hope you continue to follow.
